Basque Cheesecake How to make Cheesecake Sanjeev Kapoor Khazana

Like a flambeed crust, this Spanish cheesecake has a lovely crispy layer and a luscious, smooth interior, except that the cheesecake is baked.

BASQUE CHEESECAKE

Ingredients

1 cups cream cheese
cup castor sugar
3 eggs
1 tsp vanilla essence
cup fresh cream
1 tbsps refined flour (maida)
tsp salt

Method

1. Preheat the oven at 200C.
2. Take cream cheese in a bowl fitted with a paddle attachment. Add sugar and beat well till light and fluffy. Scrape the sides of the bowl at regular intervals of time.
3. Break eggs in a bowl. Add 1 egg at a time and beat till well combined. Add vanilla essence and mix well.
4. Add fresh cream and beat for 1 minute.
5. Add refined flour, salt and mix well with light hands.
6. Pour the batter in a loose bottom cake tin lined with a parchment paper. Tap well to get rid of any air bubbles.
7. Bake in preheated oven for 35-40 minutes. Allow to cool completely.
8. Refrigerate for 3-4 hours.
9. Demould, cut into wedges and serve.
