Batata Bhaji | Sanjeev Kapoor Khazana

Thin slices of Potato dipped in gram flour batter and deep fried, an ideal snack on a rainy day.

BATATA BHAJI

Ingredients

3 medium potatoes (batata), peeled
1½ cups gram flour (besan)
Oil for deep-frying
½ teaspoon turmeric powder
Salt to taste
1 teaspoon red chilli powder
1 teaspoon carom seeds
½ teaspoon baking soda
Chaat masala for sprinkling
Date-tamarind chutney for serving
Red chilli-garlic chutney for serving

Method

1. Heat sufficient oil in a kadai.
2. Put gram flour in a bowl. Add turmeric powder, salt, chilli powder and carom seeds and mix. Add some water and mix to make a semi-thick batter.
3. Take some water in a bowl and thinly slice the potatoes using a mandolin slicer in it.
4. Add baking soda to the batter and mix well.
5. Drain and dip each potato slice in the batter, put in hot oil directly and deep-fry till golden brown and crisp. Drain on absorbent paper.
6. Sprinkle some chaat masala on top and serve hot with date-tamarind chutney and red chilli-garlic chutney.
