Bean And Bacon Soup | Sanjeev Kapoor Khazana

Bean and Bacon Soup is hearty and filling and filled with veggies and chunks of bacon! Nothing warms the soul like a homemade soup.

BEAN AND BACON SOUP

Ingredients

1 cup tinned Cannellini beans
3-4 bacon strips
1 medium carrot
½ stalk leek
2x 5 inch celery
1 tablespoon chopped garlic
1 medium onion, finely chopped
2-3 fresh thyme sprigs
Salt to taste
Crushed black peppercorns to taste
Toasted French bread slices for serving

Method

Peel the carrot. Discard the stem and cut into small pieces. Chop leek and celery.
Roughly chop bacon strips.
Heat a deep non-stick pan. Add chopped bacon and cook till crisp, stirring occasionally. Transfer in a bowl.
Add garlic in the same non-stick pan and sauté for 30 seconds. Add onion and sauté till translucent.
Add fresh thyme leaves and sauté. Add chopped carrots, leek and celery, mix and cook for 1-2 minutes.
Add salt, mix, cover and cook till the chopped vegetables turn golden brown.
Add cannellini beans and 2½ cups water and mix. Add salt, mix, cover and cook till the mixture boils.
Blend the mixture using an electric hand blender into a smooth mixture.
Pour soup in individual serving bowls, top with some crispy bacon and serve hot with toasted French bread slices.
