3 BEARS Polenta 2 Ways/ Easy Recipe made with Goldielocks

Polenta is a form of porridge that is made from flint corn. Polenta can be served creamy, or cooled and cut into bars. When cooled, brush polenta with olive oil and sear it on a griddle pan.

Top off polenta with some fresh herbs, drizzle with good quality oil and you have yourself a healthy and nutritious meal.

Or for the creamy, you can try stirring in cream cheese, crme fraiche or even mascarpone cheese. YUM!

1 cup polenta
2 cups whole milk
2 cups water
1 1/2 tablespoons butter
1/4 cup cream cheese
3 tablespoons of grated parmesan cheese
Salt and pepper to taste
Good quality extra virgin olive oil
1 tablespoon butter: optional
1 teaspoon of mixed herbs (seasonal) optional, but suggested. Chives, parsley, thyme and sage are all wonderful options.
Bring milk, water and butter to a boil, then add polenta, stir, bring to simmer and partially cover pot with a lid for about 30 minutes. Once the polenta is done, stir in 1/4 cup of cream cheese, grated parmesan and if you like, you can add a tablespoon of butter: optional. Top with fresh herbs. Enjoy!
