A simple and very authentic south Indian dish which hardly takes time to make and is very tasty!BEETROOT PORIYALIngredients2 large beetroots 1 tbsp coconut oil1 tsp mustard seeds1 tsp split skinless black gram (dhuli urad dal)1 tsp Bengal gram (chana dal)¼ tsp asafoetida (hing)2-3 green chillies, chopped2 dried red chillies, broken10-12 curry leavesA pinch of turmeric powderSalt to taste¼ cup scraped fresh coconutFried curry leaves for garnishMethod1. Peel and cut beetroots into small cubes. 2. Heat coconut oil in a non-stick pan, add mustard seeds, split skinless black gram, Bengal gram, asafoetida, green chillies, dried red chillies and curry leaves and sauté for a minute.3. Add beetroot, sauté for 1-2 minutes. Add turmeric powder and salt and mix well. Cover and cook for 6-8 minutes.4. Sprinkle coconut and take the pan off the heat. Transfer into a serving bowl, garnish with fried curry leaves and serve hot.
