Begun Bhaja | Sanjeev Kapoor Khazana

Shallow-fried Eggplant rounds, spiced with Turmeric and Chilli powder. These scrumptious eggplant bites are a great addition to any meal!

BEGUN BHAJA

Ingredients

1 large brinjal(baingan)
Oil for shallow-frying
Salt to taste
½ teaspoon turmeric powder
1 teaspoon red chilli powder

Method

1. Heat sufficient oil a non-stick pan.
2. Cut half brinjal into thick roundels. Halve the remaining brinjal and thickly slice. Transfer in a bowl.
3. Add salt, turmeric powder and chilli powder and mix well.
4. Shallow-fry in hot oil till golden from both sides. Drain on absorbent paper.
5. Serve hot.

Preparation Time: 5-8 minutes
Cooking Time: 8-10 minutes
