Berry Spoon Cake Recipe - Simple After Dinner Cake - Glen And Friends CookingThis cake is so simple and can be made with any combination of in season or frozen fruit that you have on hand. The cake recipe comes together in no time, and can be made after supper if you're feeling like you need a little dessert.Ingredients:500 mL (2 cups) blueberries500 mL (2 cups) raspberries300 mL (1 cups) sugar250 mL (1 cup) flour5 mL (1 tsp) baking powderPinch salt4 eggs15 mL (1 Tbsp) orange zest15 mL (1 Tbsp) oil5 mL (1 tsp) vanilla extractMethod:Preheat oven to 180C (350F).Grease a 9x13 baking pan.Pour the berries into the bottom of the pan, and sprinkle with a bit of the sugar.In a bowl mix together sugar, flour, baking powder, and salt.Stir in the eggs, oil, zest and vanilla, until smooth.Spoon over the berries and then bake for about 20 minutes.We no longer do sponsorships or paid promotions of any kind; we tried it a couple of times but it never felt right.
