Best Pastries in Japan from Hidemi Sugino | Japanese Eats

Hidemi Sugino s a name in Japan that hardly needs introduction. He trained and apprenticed at Patisserie Peltier (now defunct) in France and ismost noted for winning the prestigious Coupe de Monde de la Pâtisserie back in 1991, he quickly became the spotlight upon returning to Japan, first opening an atelier and patisserie in Kobe before starting his own dessert boutique in Ginza, Tokyo, which is featured in this video.

Sugino's cakes are uniquely distinct and beautiful, embellished with its own distinct handmade décor, ranging from fruit gelée glazes and fresh fruit to quenelles of fresh whipped cream to gold leaf details. Each bite is a textural contrast of creamy mousse and buttercream, soft cake, and juicy fruit.

The cakes’ flavor combinations range from the elegantly simple to the layered and complex. Sugino chooses flavors that on first glance, would appear incongruous when combined, but under his masterful skills, actually results in a complementary and sophisticated balance of flavors.

Having also just been awarded the title of Asia’s Best Pastry Che, at the Asia’s 50 Best Restaurants 2015 awards, there is no sign of Sugino slowing down in his creativity or mastery of flavors. If you love sweets, or simply want to experience the most amazing cakes in Japan, you must visit Hidemi Sugino.
