Tinda (round gourds) stuffed with masala and cooked in onion tomato masala.BHARVA TINDA MASALAIngredients 8-10 medium round gourds (tinda), peeled and slit1 teaspoon coriander powder1 teaspoon fennel powder1 teaspoon dried mango powder¼ teaspoon turmeric powder1 teaspoon red chilli powder ¼ teaspoon garammasala powderSalt to taste1 tablespoon oil1 medium onion, finely chopped1 inch ginger, chopped 1 medium tomato, finely choppedMethod1. Combine coriander powder, fennel powder, dried mango powder, turmeric powder, chilli powder, garammasala powder and salt in a bowl and mix well.2. Reserve some prepared masala and stuff the remaining masala intothe gourds.3. Heat oil in a non-stick pan. Add onion and ginger and sauté till onion turns golden. Add tomato and cook till pulpy.4. Reduce heat, add remaining masala and mix well. Add stuffed round gourds, mix, cover and cook for 1-2 minutes. Add some water, mix, cover and cook on low heat till gourds are fully done.5.
