Here is how you can make it:

Bharwan Achari Bhindi

Ingredients

Bhindi 400grms

Boiled potatoes mashed medium 3 nos

Achari masala 2 ½ tbsp

Onion cube 2 large

Garlic sliced 8-10

cumin seeds (jeera) 1 tsp 

Kallonji (nigella seeds) 1 tsp 

Turmeric powder (haldi) 1/2tsp 

Ginger slice 1inch

Red chilli powder 1 tsp

Coriander powder 1 ½ tbsp

Dry mango powder ½ tsp

Garam masala powder 1 tsp

Green chillies, slice 3-4

Oil 2 +2 tbsp 

Tomatoes cubes 2

Salt  to taste

Method

 In a bowl add Boiled mashed potatoes, aachari masala and mix well.

 Wash dry and slit the lady finger (bhindi) from the center and keep aside.

 Now stuffed the bhindi with prepared mixture and set aside

 Heat oil in a kadai, add cumin seed , kallonji, stuffed bhindi and sauté well. Cover it with

lid and cook it on medium flame. Add sliced garlic, ginger and slit green chilli and cover

and cook for 3-4.

 After 3-4 minutes open the lid and lightly tossed the bhindi. Now add onion cubes,

tomato cubes, red chilli powder, turmeric powder, coriander powder, dry mango

powder, salt and garam masala powder. Cover and cook for 4-5 minutes .

 Open the lid, mix and cook for some more time until the bhindi is soft.

 Remove it in a serving bowl garnish it with coriander sprig and serve

Achari Bhindi hot dog

Hot Dog bread – 2 no

Pickle masala 2 tbsp

Mayonnaise 3 tbsp

Cabbage shredded ¼ cup

Carrot juliennes ½ no

Method

 Slit the hot dog bun spread the pickle masala and mayonnaise.

 Then place the shredded cabbage and carrot.

 Place the achari bhindi and serve with tomato ketchup.
