Bhatwani Dal Uttarakhand Special Sanjeev Kapoor Khazana

A unique dal made from pound soya beans. This dal is a Kumaoni speciality. Isnt it amazing what delicious recipes are yet to be discovered?

BHATWANI DAL

Ingredients

1 cup soya beans
2 tbsps black sesame seeds
2-3 tbsps mustard oil
1 tsp cumin seeds
tsp asafoetida (hing)
10-15 garlic cloves, crushed
2 medium onions, chopped
2-3 green chillies, chopped
2-3 dried red chillies, stemmed
1 large tomato, finely chopped
tsp turmeric powder
1 tsps coriander powder
1 tsp red chilli powder
2 tbsps chopped fresh coriander leaves
Steamed rice for serving

Method

1. Heat a non-stick pan, add soya beans and dry roast on a medium heat for 4-5 minutes.
2. Add black sesame seeds and roast for a minute. Take the pan off the heat and allow to cool.
3. Transfer in a grinder jar and grind to coarse powder.
4. Heat mustard oil in a nonstick pan. Add cumin seeds and once they start to change the colour, add asafoetida and mix well.
5. Add garlic and saut for a minute.
6. Add onions and saut till golden brown.
7. Add green chillies, dried red chillies and saut for 30 seconds.
8. Add tomato and saut till it turns pulpy.
9. Add turmeric powder, coriander powder, red chilli powder and mix well.
10. Add ground mixture and mix well. Add 3-4 cups hot water and mix well.
11. Once the mixture comes to a boil, lower the heat, cover and cook for 10-15 minutes.
12. Add coriander and mix well.
13. Transfer in a serving bowl and serve hot with steamed rice.
