BHEIN BATATE KI SABZIIngredients½ cup sliced lotus stem (bhein)2 medium potatoes (batata), peeled and cut into small pieces2-3 tablespoons oil1 teaspoon cumin seeds¼ teaspoon fenugreek seeds1 teaspoon mustard seeds1 inch ginger, chopped2 green chillies, chopped½ brinjal, cut into cubes1 teaspoon coriander powder¼ teaspoon turmeric powder½ teaspoon red chilli powder3 tablespoons tomato puree1 medium bunch spinach, choppedSalt to tasteMethod1. Heat oil in a non-stick pan. Add cumin seeds, fenugreek seeds, mustard seeds, ginger and green chillies, mix and sauté till seeds splutter.2. Add lotus stem, brinjal and potato and mix well. Add coriander powder, turmeric powder and chilli powder, mix well and add little water. Cover and cook till 5-7 minutes or till the vegetables turn soft.3. Add little water, tomato puree and spinach and mix well. Add salt, mix well cover and cook for 5-7 minutes. 4. Serve hot garnished with a coriander sprig.
