BHINDI DO PYAAZA

Ingredients:

300 grams lady-fingers, slit
2 medium onions, sliced
10-12 shallots (madras onion)
½ cup fried onion
3 tbsps oil + for deep frying
1 tsp cumin seeds
1 tbsp crushed coriander seeds
1 tbsp ginger-garlic paste
1 medium tomato, chopped
Salt to taste
4 tbsps yogurt
1 tbsp coriander powder
1 tsp cumin powder
1½ tsps red chilli powder
¼ tsp turmeric powder
½ tsp chaat masala
¼ tsp green cardamom powder
2 tbsps chopped coriander leaves
1 inch ginger, cut into strips
Coriander sprig for garnish

Method:

1. Heat oil in non-stick pan, add cumin seeds and let the colour change. Add coriander seeds, sliced onions, and sauté till golden brown.
2. Add ginger-garlic paste, sauté for 1 minute. Add tomato, salt and mix well. Cover and cook till tomato is pulpy.
3. Addyogurt, mix well. Add coriander powder, cumin powder, red chilli powder, turmeric powder, chaat masala, green cardamom powder, mix well. Cook for 2-3 minutes.
4. Add chopped coriander leaves, ginger strips, shallots, fried onion and mix well. Cook for 2 minutes. Take it off the heat and set aside.
5. Heat sufficient oil in another non-stick pan, deep fry the lady-fingers till crisp.
6. Place the prepared mixture back on heat, add the deep fried lady-fingers and mix well. Cook for 2 minutes.
7. Transfer to a serving bowl, garnish with coriander sprig and serve hot.

MOOLI AUR PATTE KI SUBZI

Ingredients:

8-10 radishes with leaves(mooli), chopped
4 tbsps oil
1 tsp mustard seeds
A pinch of asafoetida
3 green chillies, chopped
2 spring onion, chopped
Salt to taste
½ tsp turmeric powder
1 tsp red chilli powder
4 tbsps gram flour

Method:

1. Heatoil in a non-stick pan, add mustard seeds, let the seeds splutter. Add asafoetida and green chillies, mix well.
2. Add spring onion, radish leaves, and mix well. Cook on high heat for 1-2 minutes, sautéing constantly.
3. Add radish and mix well. Cook for 2-3 minutes. Add salt, turmeric powder, red chilli powder and mix well.
4. Add ½ cup water and mix well. Once the mixture comes to a boil, add gram flour and mix. Cover and cook on low heat for 5 minutes or till the radishes are cooked completely.
5. Serve hot.
