BHUGI SABZI

Ingredients

1 large brinjal, chopped
2 medium potatoes, peeled and diced
½ cup green peas
2 tablespoons oil
2 medium onions, chopped
2-3 green chillies, chopped
1 inch ginger, chopped
¼ teaspoon asafoetida
½ teaspoon garam masala powder
½ teaspoon red chilli powder
1 teaspoon coriander powder
Salt to taste

Method

1. Heat oil in a non-stick pan. Add onions and sauté till golden.
2. Add green chillies, ginger and asafoetida and mix well. Add little water and mix well.
3. Add garam masala powder, chilli powder and coriander powder and mix well. Add little water, mix and cook till the oil separates.
4. Add brinjal, potatoes and green peas and mix well. Add little water, mix, cover and cook till the vegetables are fully done.
5. Add salt, mix well and let it get heated through.
6. Serve hot garnished with a coriander sprig.

Preparation Time: 15-20 minutes
