Bihari Mutton Curry Sanjeev Kapoor Khazana

With a unique way of marination, this mutton curry from Bihar is one of its recipes that it is known for.

BIHARI MUTTON CURRY

Ingredients

750 grams mutton, cut into 2 inch pieces on bone
3 large onions, thinly sliced
2-3 green chillies, slit
1 Kashmiri red chilli powder
tsp turmeric powder
1 tbsp coriander powder
2 tps cumin powder
2 whole garlic pods
1 tbsp ginger-garlic paste
Salt to taste
3-4 tbsps mustard oil
3-4 green cardamoms
8-10 black peppercorns
1 inch cinnamon stick
4-5 cloves
1 black cardamom
2 medium tomatoes, vertically quartered
3-4 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Steamed rice to serve

Method

1. Take mutton in a large parat. Add onions, green chillies, Kashmiri red chilli powder, turmeric powder, coriander powder, cumin powder, garlic pods, ginger-garlic paste, and salt and mix and lightly crush till each mutton piece is well coated with the masala. Set aside to marinate for 10-15 minutes.
2. Heat mustard oil in a pressure cooker and let it smoke.
3. Add green cardamoms, black peppercorns, cinnamon stick, cloves, and black cardamom and cook till fragrant.
4. Add mutton and saut on high heat for 10-15 minutes, while stirring in between every few minutes.
5. Add tomatoes and 1 cups water and mix well. Reduce the heat to medium, cover and cook for 4-5 whistles.
6. Open the cooker once the pressure has reduced completely.
7. Place the cooker back on heat and cook till the mixture comes to a boil. Add coriander leaves and mix well.
8. Transfer the curry into a serving bowl, garnish with coriander sprig and serve hot with steamed rice.
