BLACK EYED PEAS WITH BULGUR - Turkish Aegean Cuisine - Mother-in-law Recipes

In this episode I'd like to share with you a very special recipe. Black eyed pea benefits are pretty amazing and they cook easily. I deeply regret for not eating them for my whole life, but only after meeting my husband who is from the west coast of Turkey. I also just read that in the Southern U.S., eating black eyed peas on New Year's Day is considered good luck.

INGREDIENTS
2 cups dried black eyed peas
1/2 cup coarse bulgur
1 red bell pepper
1 onion
1 tbsp tomato paste
3-4 tbsp pomegranate sour sauce
Olive oil
Salt & black pepper
6-7 cups hot water
Green onions and plain yogurt for serving

DIRECTIONS
Soaking is not essential for black eyed peas, but cooking time can
be shortened if they get a quick soak.
Soak the peas in water for 1 hour.
Rinse and transfer into a pot.
Cover with water, add a pinch of salt and mix.
Bring to a boil over medium high heat.
Reduce heat to medium low and simmer for about 30 minutes.
(Cook for at least 1 hour, if not soaked in water.)
Meanwhile, chop the onion and bell pepper into cubes.
Heat 3-4 tbsp olive oil in a large pan.
Add the chopped veggies, a pinch of salt and pepper.
Saute for about 8-10 minutes, over medium low heat,
stirring occasionally.
When the veggies are tender, add tomato paste, mix well and
cook for 1-2 minutes, stirring constantly.
Add bulgur and mix.
Add the cooked&drained peas then mix.
Cover with hot water. (6-7 cups)
Adjust seasoning to taste.
Reduce heat to the lowest possible setting, cover and cook for
about 15 minutes.
In the meantime, rinse some green onions, place some plain yogurt
into a bowl and beat, so the yogurt doesn't get too watery.
Check peas for doneness, then add 3-4 tbsp pomegranate sour sauce
into the pan, mix.
Cover and cook for another 5 minutes, then turn off the heat.
Let cool for a couple minutes and place in a serving dish.
Serve hot along with green onions, yogurt and some fresh bread if desired.
