Blinis | Sanjeev Kapoor Khazana

BLINIS - (Serves - 4)

Ingredients

32 grams buck wheat flour
55 ml lukewarm milk
1 teaspoon fresh yeast
½ teaspoon sugar
2 eggs
8 grams refined flour
Salt to taste
Sour cream as required
3-4 quail eggs, hardboiled and cut into roundels
Fresh parsley leaves as required
Crushed black peppercorns to taste

Method

1. Take ½ of milk in a bowl. Add yeast and sugar, mix and set aside to activate.
2. Separate egg whites and yolks in different bowls.
3. Sieve together buck wheat flour, refined flour and salt into the activated yeast. Add remaining milk and egg yolks and mix well. Set aside to ferment for 10-15 minutes.
4. Beat the egg whites using an electric beater till soft peaks appear. Transfer in another bowl.
5. Add ½ of fermented mixture and fold. Add remaining fermented mixture and fold well.
6. Heat a non-stick pan. Put a spoonful of the fermented mixture and roast for 1-2 minutes on each side or till light golden from both sides.
7. Place the blinis upside down on a serving platter. Put some sour cream, place quail egg roundels and a parsley leaf on top.
8. Sprinkle crushed peppercorns and serve immediately.
