BLUE VELVET CAKEIngredients2 tablespoons edible blue colour2 cups refined flour + for dusting 1 cup butter + for greasing 1⅓ cups castor sugar2 eggs1 teaspoon baking powder½ cup buttermilk Cream cheese as requiredColourful edible sprinklers for sprinkling Method1. Preheat oven at 180° C. Grease a rectangle baking tin with some butter and dust with some flour. 2. Cream together the butter and castor sugar with an electric beater in a bowl. Add eggs, one by one, and cream till well combined. 3. Sift together the flour and baking powder in the mixture and fold well. 4. Add the blue colour and mix well. Add the buttermilk and mix till well combined.5. Pour the batter in the prepared tin filling ¾th. Place the tin in the preheated oven and bake for 35-40 minutes. Remove from heat, cool and demould.6. Discard the crust of the cake and cut into squares. Transfer the squares on a serving plate. Pipe out cream cheese on each and sprinkle colourful sprinklers. Serve immediately.
