Blueberry Frozen Yogurt #WellnessWednesday ProV Sanjeev Kapoor Khazana

This #wellnesswednesday let's get snackin' on the Berry known worldwide for its vibrant colour the Blueberry.

Did you know that the characteristic blue colour of this Berry comes from the plant compounds 'anthocyanins' which also give it its extraordinary antioxidant and anti-inflammatory properties - and these berries are one of the highest sources of this compound. Add to this the fact that a handful of blueberries cover a large portion of daily dietary fiber needs - and you have yourself a perfect healthy snack in this superfood.

BLUEBERRY FROZEN YOGURT

Ingredients

1 cup ProV Premium Dried Blueberries + for sprinkling + for garnish
2 cups thick yogurt
1 lemon
3 tbsps honey
Fresh mint sprigs for garnish

Method

1. Take the ProV Premium Dried Blueberry in a non-stick shallow pan. Switch the heat on. Zest the lemon directly into it and add cup water. Mix and cook on medium heat for 6-8 minutes. Take the pan off the heat and allow to cool.
2. Put the cooled mixture into a blender jar and blend to a coarse paste. Add yogurt and honey and blend to a coarse paste.
3. Transfer half of the mixture into an air tight container, sprinkle some ProV Premium Dried Blueberry, transfer the remaining mixture and sprinkle with some ProV Premium Dried Blueberry, cover the container with a lid and keep it in the freezer for 7-8 hours or till set.
4. Gently scrape the sides with a knife, de-mould the frozen yogurt, cut into slices. Arrange on a serving plate. Garnish with ProV Premium Dried Blueberry, mint sprigs and serve immediately.
