Ingredients:
1/2 kg Potatoes (boiled & mashed)
1 tbsp Turmeric powder
1 tsp Ginger garlic paste
Salt to taste
1 tsp red chili powder
1 tbsp Lemon juice
1 tsp Cumin powder
1 tsp Garam masala
1 tbsp Red chili flakes
1 tbsp Coriander (chopped)
Ingredients for green chutney:
6 Sandwich bread (slices)
1/2 cup Coriander
10-12 Mint leaves
3-4 Green chilies
1 tsp Lemon juice
3 Garlic cloves
2 tbsp Coconut powder
1 tsp Lemon juice
Salt to taste
3 tbsp Vinegar
Ingredients for layering:
Cucumbers slices (as required)
Tomatoes slices (as required)
Butter for spread
1 cup Mozzarella (grated)
Chaat masala for sprinkle
Sev for sprinkle
Directions for filling:
In a pan heat oil, then add ginger garlic paste and sauté for a minute.
Then add potatoes, turmeric, salt, red chili powder, lemon juice, cumin powder, garam masala, fresh coriander and red chili flakes.
Mix all these ingredients well and your filling is ready.
Directions for green chutney:
In a blender add coriander, mint leaves, green chilies, lemon juice, garlic, coconut, lemon, salt and vinegar.
Blend all these ingredients well until you get a thick consistency. Add water if required.
Directions for layering:
Take a bread piece spread butter then green chutney and in last potato mixture evenly.
Then add tomato slices, sprinkle some chaat masala and cover with another bread slice.
Then again spread green chutney, potato mixture, cucumber slices, chaat masla and top it with mozzarella. And cover with bread slice.
Then on top spread butter and toast it on a pan until light golden brown.
Your three layered Bombay sandwich is ready to serve.

Cooking time: 35 minutes
