SU BRE (Turkish Water Pastry) MADE WITH CREPES I Easy to make, tastes like real su brei

In this episode, I'd like to share with you my 'Su Brei Made with Crepes' recipe. Su brei is the king of Turkish pies, but it is difficult to make and takes time. So many people, including me, are trying to find a way to make it easier and use store bought yufka or cooked pasta. I tried many recipes, but non of them were as good as real su brei. Except for this crepe version. It turned out so well, so I really hope you give it a try.

INGREDIENTS
8 crepes, cooked in a large pan
100 gr. (1/2 cup) Turkish white cheese (or feta)
100 gr. butter
One handful fresh parsley (optional)
1 tsp salt
A pinch of black pepper

DIRECTIONS

Fill a big pan with water, bring to a boil over medium heat.
Fill a big bowl with cold water, also add some ice cubes.
And place a strainer, upside down, over a tray.
Melt the butter in a large pan over medium heat.
Then turn off the heat and transfer melted butter to a small bowl.
Lay crepe number 1 at the bottom of the pan, that has been used to melt the butter.
Pour 1-2 tbsp butter on top and brush to spread.
Add 1 tsp salt into the boiling water, mix.
Now you need to blanch crepe number 2.
Slide it into the boiling water and cook exactly for 1 minute.
Use a spatula to prevent it from sticking.
Then lift it up and place in the ice cold water, for 5-10 seconds.
Finally place smoothly over the strainer, and let drain for 5-10 seconds.
Lay it flat in the pan, over the first crepe.
Add 2 tbsp melted butter on top and brush.
Repeat the same with crepe number 3, and blanch.
Cook for 1 minute, put in cold water, drain, lay over crepe number 2. then add 2 tbsp butter.
Take crepe number 4 and lay it flat, over crepe number 3, without blanching.
Brush the top with 2 tbsp butter.
Crumble and spread the cheese on top.
If desired, you can also add one handful chopped parsley.
Season with a pinch of black pepper, add some salt if using unsalted cheese.
Make sure the water in the bowl remains cold, add some more ice cubes if needed.
Blanch the crepes number 5, 6 and 7 one by one, just like crepes number 2 and 3.
Cook in the boiling water for 1 minute, soak in cold water and let drain over the strainer.
Lay flat in the pan and brush with 2 tbsp butter, each of them.
Finally, lay crepe number 8 on top, without blanching.
Pour the remaining butter, and brush.
So you DON'T blanch, crepe number 1, number 4 where you add the filling, and number 8, the last one.
Put the pie pan over a large burner of your gas stove, over medium low heat.
Cook until the bottom is golden brown, rotating the pan slightly in every 15-20 seconds and giving it a one whole tour.
Gently smooth the edges with spatula, occasionally.
Check for doneness, it takes about 8 minutes, to cook the first side.
Before fliping, hold the pie with spatula, and pour the excess butter from pan to a bowl.
Put a large plate on top, and flip the pie very carefully.
Pour the excess butter back to the pan then slide the pie.
Be aware that, this is the most tricky part of the whole recipe, so slide the pie slowly using a spatula.
Smooth the top and the edges.
Then cook until the second side is golden brown, keep rotating the pan.
The other side cooks a bit faster, takes about 6.5 minutes.
Transfer baked pie to a serving plate and let cool for about 5-10 minutes.
Using a sharp knife, cut into 4 wedges and enjoy the amazing taste of legendary Su Brei :)
It literally took, two of us, only 2-3 minutes, to eat the whole thing!
