Bread and vegetable cubes tossed in olive oil dressing.BREAD AND MIXED VEGETABLE SALADIngredients½ soft bread loafCrushed black peppercorns to taste 1 teaspoon mixed dried herbs2 medium tomatoes1 medium onion1 large cucumber, peeled1 bunch fresh basil leaves, choppedDressing ¼ cup extra virgin olive oil 2 tablespoons red wine vinegarSalt to taste½ teaspoon crushed black peppercorns½ teaspoon mixed dried herbsMethod 1. Preheat oven to 180° C.2. Cut bread into small cubes. 3. Put the cubes on a baking tray and drizzle olive oil, sprinkle peppercorns, salt and dried mixed herbs.4. Place the tray in the preheated oven and toast till the bread is crisp.5. Deseed and cut cucumber and tomatoes into cubes.6. Cut onion into cubes and separate the layers.7. For the dressing, put 3 tablespoon olive oil in a bowl, add vinegar, salt, mixed herbs, crushed peppercorns. Tear and add basil leaves and mix well.8. Mix vegetables and crisp bread cubes in another bowl.9. Arrange the veggies and bread on a serving plate, pour dressing on top and serve.
