Easy and quick South Indian Brinjal chutney for Idli/Dosa/Pongal - no grilling or roasting involved. There are many methods to make Brinjal chutney, mostly involving roasting of brinjal or smoking it over direct flame and then grinding it with red chillies and lentils. Our version is an easy method in which we sauté onion and tomato along with brinjal. When all the three are added to roasted lentils and red chillies, the result is an unique flavour making this a must try chutney. Do try this and comment how it turns out for you! ❤️

Shelf life : 1 day (2 days if refrigerated)

INGREDIENTS:
1. Bengal gram (Channa dal / Kadala paruppu) - 1/2 tbsp
2. Black gram (Urad dal / Ulutham paruppu) - 1/2 tbsp
3. Dry red chillies - 2 or 3
4. Onion, small - 1
5. Brinjal , medium - 2
6. Tomato, small - 1
7. Tamarind, soaked - 1 small piece
8. Mustard seeds - 1/4 tsp
9. Split black gram - 1/2 tsp
10. Curry leaves - 1 sprig
11. Oil - 2 to 3 tsp + 1 or 2 tsp for tempering
12. Salt - to taste
