Brown Butter Crepes, French Vanilla Ice Cream, & Cherry Topping

I always enjoy making crepes and seasonal ingredients such as summer cherries are such a fantastic ingredient that takes full advantage of such a simple pastry. Add a few scoops of homemade French vanilla ice cream and this recipe becomes an instant classic after a warm summer evening supper. Crepe Batter:
1 cup all purpose flour
2 tbsp brown butter
1 cup milk
1 large egg or 2 small/medium eggs
1 tbsp sugar
small pinch of salt

Cherry Jam/Compote:
1 cup cherries
3-4 tbsp sugar
1 tbsp vanilla extract
1/2 cup water
1 tsp corn starch


French vanilla Ice Cream:
6 egg yolks
1/2 cup sugar
2 cups cream (or half milk and cream)
1 tbsp vanilla extract
small pinch of salt
