Ingredients for Chicken Marination:
Chicken 1 kg
Fried onion 1 cup
Ginger garlic paste 1/2 tbsp
Yogurt 1 cup
Red chili powder 2 tbsp
Turmeric powder 1 tsp
Cumin seeds 1 tsp
Garam masala powder 1/2 tsp
Salt 2 tsp
Nutmeg powder 1/4 tsp
Mace powder 1/4 tsp

Ingredients for Rice Preparation:
Guard Brown Rice 2 cups
Water (for soaking) as required
Water (for boiling) 5 cups
Cloves 8-10
Salt to taste
Soaked rice 2 cups
Oil 1 tbsp
Bay leaf 1

Ingredients for Chicken Preparation:
Olive oil 1/4 cup
Black peppercorns 8-10
Cinnamon stick (1 inch) 3
Cloves 1 tsp
Star anise 3
Black cardamom 2
Bay leaf 1


Ingredients for Layering:
Boiled rice 2 cups
Prepared chicken
Green coriander (Chopped) as required
Mint leaves as required
Tomato slices as required
Fried onion as required
Orange food color 1/2 tsp

Directions for Chicken Preparation:
1. In a bowl add chicken, fried onion, yogurt, ginger garlic paste, red chili powder, turmeric, cumin seeds, garam masala powder, salt, nutmeg powder, mace powder and mix well. Marinate it for 15-20 minutes.
2. Now in a pot heat olive oil and add black peppercorns, cinnamon stick, cloves, star anise, black cardamom and cook for 1-2 minutes.
3. Now add marinated chicken and cook chicken for 8-10 minutes or until 85% cooked and take off flame.
Directions for Rice Preparation:
4. In a bowl add Water and Guard Brown Rice, soak for 25-30 minutes.
5. In a pot heat water and bring it to boil. Add salt, cloves, oil, bay leaf and soaked rice. Cook until rice is 80% boiled. Set aside.
Directions for Layering:
6. In a pot add layer of chicken, boiled rice, Chicken, tomato slices and boiled rice. Add food color, green coriander, mint leaves, fried onion, and cover and steam on low flame for 10 minutes. Your Brown rice biryani is ready.

Cooking time: 35-40 mins
