Brown Sugar Bacon Cookies
Watch this simple how-to video for instructions to bake these great sugar bacon cookies.

Ingredients:
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 sticks unsalted butter, room temperature
1 cup firmly packed light brown sugar
1 cup granulated sugar
2 eggs
½ cup bacon, rendered and chopped fine

Method:
Preheat the oven to 325°F.
Sift together the flour, baking soda, and salt.
In a stand mixer with a paddle attachment, cream together the butter and sugars on medium speed until light and fluffy, scraping the sides if necessary.
Add the eggs one at a time mixing until incorporated.
Reduce the speed to low and add the flour mixture a little at a time, mixing until fully incorporated.
Scrape the sides of the bowl and fold in the bacon by hand.
Scoop with an ice-cream scoop onto parchment- lined sheet pans, flattening each cookie slightly.
Bake for 14 to 18 minutes, until golden brown.
Makes 2 - 3 dozen medium-sized cookies
