Burger Salad | Sanjeev Kapoor Khazana

Chicken mince patty served on a bed of fresh salad.

BURGER SALAD

Ingredients

1 cup chicken mince
1 egg
Salt to taste
Black pepper powder to taste
5-6 garlic cloves, chopped
2-3 fresh parsley sprigs
1 medium onion
Oilfor shallow-frying
8-10 cherry tomatoes
1 small head iceberg lettuce
150 grams processed cheese
Juice of ½ lemon
1 tablespoon olive oil
1 teaspoon mustard paste
8-9 fresh oregano sprigs + as required
½ cup bread croutons
Tomato ketchup as required

Method

1. Combine chicken mince, egg yolk, salt, pepper powder and garlic in a bowl and mix well. Chop some of the parsley and add. Mix well.
2. Cut onion into rings.
3. Heat some oil in a non-stick pan.
4. Halve cherry tomatoes. Tear lettuce leaves and place in another bowl.
5. Place a medium size ring mould in the pan, add a portion of the chicken mince mixture in it and press. Place a cheese slice, top with another layer of chicken mixture and press to make a patty. Shallow-fry, flipping, till golden and chicken is fully cooked.
6. Add onion rings in the same pan and sauté till caramelized.
7. Add cherry tomatoes to the lettuce. Cut some cheese into small cubes and add alongwith lemon juice, salt, pepper powder and olive oil and toss well.
8. Add 1 teaspoon mustard paste and mix well.
9. Chop remaining parsley and some of the oregano add and mix well. Add half the croutons and toss.
10. Transfer the salad in a serving bowl. Top with caramelized onion and place the patty. Tear remaining oregano and add alongwith remaining croutons. Top with a dollop of tomato ketchup and grate remaining cheese on it. Serve immediately.

Cooking Time: 8-10 minutes
