Burnt Garlic Squids | Sanjeev Kapoor Khazana

Marinated squid rings deep fried and tossed in garlic and soy sauce.

BURNT GARLIC SQUIDS

Ingredients

2 tablespoons chopped garlic
3-4 squids, cut into rings
Salt to taste
Crushed black peppercorns to taste
2 teaspoons vinegar
1-2 fresh red chillies, finely chopped
2 tablespoon light soy sauce
1 tablespoon oil + for deep-frying
1 egg
3 tablespoons cornstarch
3-4 spring onion bulbs, finely chopped
1 stalk spring onion greens, finely chopped
3-4 garlic cloves, sliced and fried

Method

1. Combine squids, salt, crushed peppercorns, 1 teaspoon vinegar, red chillies and 1 tablespoon soy sauce in a bowl and mix well. Set aside for 15 minutes.
2. Heat sufficient oil in a pan.
3. Break egg in a bowl and whisk well. Add ½ of it to the squid mixture and mix. Add cornstarch and mix well.
4. Deep-fry prepared squid rings in hot oil till golden and crisp. Drain on absorbent paper.
5. Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic and sauté till golden. Add spring onion bulbs and sauté for a minute.
6. Add fried squids and mix. Add remaining soy sauce, crushed peppercorns, chopped coriander and spring onion greens and mix. Add remaining vinegar and mix well.
7. Serve hot garnished with fried garlic.
