Marinated squid rings deep fried and tossed in garlic and soy sauce.BURNT GARLIC SQUIDSIngredients2 tablespoons chopped garlic3-4 squids, cut into ringsSalt to tasteCrushed black peppercorns to taste2 teaspoons vinegar1-2 fresh red chillies, finely chopped2 tablespoon light soy sauce1 tablespoon oil + for deep-frying1 egg3 tablespoons cornstarch3-4 spring onion bulbs, finely chopped1 stalk spring onion greens, finely chopped3-4 garlic cloves, sliced and friedMethod1. Combine squids, salt, crushed peppercorns, 1 teaspoon vinegar, red chillies and 1 tablespoon soy sauce in a bowl and mix well. Set aside for 15 minutes.2. Heat sufficient oil in a pan.3. Break egg in a bowl and whisk well. Add ½ of it to the squid mixture and mix. Add cornstarch and mix well.4. Deep-fry prepared squid rings in hot oil till golden and crisp. Drain on absorbent paper.5. Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic and sauté till golden. Add spring onion bulbs and sauté for a minute. 6. Add fried squids and mix. Add remaining soy sauce, crushed peppercorns, chopped coriander and spring onion greens and mix. Add remaining vinegar and mix well.7.
