Burrito Bowl | Tanya Tandon | Instachef | Sanjeev Kapoor Khazana

Wholesome spicy one pot meal with loads of vegetables, baked beans and cooked rice. A must try !

BURRITO BOWL - (Serves -4)

Ingredients

½ cup red kidney beans (rajma), soaked for 6-8 hours and boiled
2 cups cooked Basmati rice
1 teaspoon chipotle sauce
2 tablespoons sour cream
1 tablespoon lemon juice
Salt to taste
5-6 iceberg lettuce leaves
½ cup boiled corn kernels
¼ cup salsa
¼ cup guacamole
1 small tomato, finely chopped
2 teaspoons chopped fresh coriander leaves

Method

1. Mix together chipotle sauce, sour cream, lemon juice and salt in a bowl.
2. Spread rice in a small round casserole filling ¾ of it. Place lettuce leaves and put corn kernels, red kidney beans, salsa, guacamole, tomato and coriander leaves on top.
3. Sprinkle coriander leaves and salt. Drizzle sour cream-chipotle sauce on top and serve immediatelty.
