Original Indian Butter chicken recipe as made by Chef Harpal Singh Sokhi,बटर चिकन रेसिपी Butter Chicken Recipe.Ingredient QuantityOil for cooking Green Cardamom 6-8 no. Mace ½ bladeGarlic Chopped 1 Tbsp Tomatoes roughly cut 6- 8 no. Kashmiri Red chilli powder 1½ tsp Green Chilli Juliennes 2 no. Ginger Juliennes 1 inch Butter 3 Tbsp Tandoori chicken ½ no. Fresh cream ½ cup Kasoori Methi 1 tsp Honey 1 Tbsp Salt to tasteCoriander Sprig for garnish Method: 1. Heat 1 tbsp of oil in a pan. Add green cardamom and mace, sauté till light brown.2. Add chopped garlic and sauté till brown.3. Add tomatoes, mix well.4. Add salt, mix well and cook for 6-8 min. or till tomatoes get pulpy.5. Add red chilli powder, mix well and cook for 1 min.6. Switch of the flame; cool it in room temperature and grind it to a smooth paste. Keep it aside.7. Heat 1 tbsp of oil in another pan.8. Add green chilies, ginger julienne, mix well and sauté for 1 min.9. Strain the tomato gray in to the pan, mix well.10. Add butter, mix well. Cover and cook for 6-8 min on medium heat.11. Cut the tandoori chicken into medium pieces and keep it aside.12. Add fresh cream, mix well and cook for 1 min.13. Add tandoori chicken, mix well and cook for 2-3 min.14. Add kasoori methi, honey, mix well and cook for another 30 sec.15. Switch of the flame, stir well.16. Remove in serving bowl; sprinkle some kasoori methi on top. Garnish with fresh cream and coriander leaves and serve hot.
