Butter Mushroom Rice Rice Recipes Sanjeev Kapoor Khazana

With the lovely glaze of the butter and the light flavouring of the spring onion, spices and sauces, the Butter Mushroom Rice is ready in no time.

BUTTER MUSHROOM RICE

Ingredients

2 tbsps butter
4 button mushrooms
3 cups cooked Basmati rice
2 spring onions
1 tbsp finely chopped garlic
1 tbsp finely chopped celery stick
1-2 fresh red chillies, diagonally sliced
1 tbsp finely chopped ginger
Salt to taste
White pepper powder to taste
1 tsp green chilli sauce
A dash of soy sauce

Method

1. Diagonally slice the spring onion bulbs and finely chop the greens.
2. Thinly slice the mushrooms.
3. Heat butter in a non-stick pan. Add garlic and celery and mix well. Cook for 1 minute.
4. Add the sliced spring onion bulbs and saut for 1 minute.
5. Add red chillies and ginger and mix well.
6. Stir in the mushrooms and saut on high heat for 2-3 minutes.
7. Add salt, white pepper powder, green chilli sauce, and soy sauce and mix well. Cook for 1 minute.
8. Add Basmati rice and toss till well combined. Add most of the chopped spring onion greens and mix well.
9. Transfer the rice into a serving bowl, garnish with remaining spring onion greens and serve hot.
