Hojicha originated in Kyoto in the 1920s, when a tea merchant roasted the leftover leaves, stems and twigs to reduce waste . Hojicha can be made from different types of green tea, such as bancha, kukicha or sencha, which affect its taste and aroma. Hojicha has very low caffeine content and low astringency, making it a popular after-dinner or evening tea . Hojicha can also be used as a flavoring for desserts and drinks.

Kamairicha is a type of Japanese green tea that is produced by pan-frying the tea leaves instead of steaming them. This gives the tea a mildly roasted flavor and aroma, with more sweet and fresh notes than bitter ones. Kamairicha is a specialty of Kyushu, the western region of Japan, where it accounts for only 2% of all Japanese tea production. Kamairicha has two main varieties: kamairi tamaryokucha, which has curly leaves shaped like commas, and kamanobicha, which has needle-shaped leaves like sencha. This Kamairicha is curly.
