Cajun Fish | Sanjeev Kapoor Khazana

Fish fillets coated with freshly made cajun spice mix and shallow fried.

CAJUN FISH

Ingredients

2 basa fish fillets
1½ teaspoons red chilli flakes
1 teaspoon stock cubes
1 teaspoon red chilli powder
1 teaspoon mixed dried herbs
½ teaspoon garlic powder
Salt to taste
2 tablespoons refined flour
2 tablespoons oil
1 tablespoon lemon juice

Method

1. To make Cajun spice, grind together chilli flakes, stock cubes, chilli powder, dried herbs, garlic powder and salt to a fine powder. Add refined flour and grind again. Transfer onto a plate.
2. Trim fish fillets from both ends. Add lemon juice and rub well.
3. Heat oil in a non-stick pan.
4. Coat fish fillets with Cajun spice, place in hot oil and cook till evenly golden from both sides.
5. Serve hot garnished with a parsley sprig and lemon slices.

Preparation Time: 5-8 minutes
Cooking Time: 8-10 minutes'
