Californian Walnut Banana Bread | Walnut Surprise by Chef Anupa | Sanjeev Kapoor Khazana

Banana bread recipes are a great way to use overripe bananas. This recipe gets added crunch from chopped walnuts. This homely and wholesome cake is also light and moist, with the natural sweetness of sticky bananas and the warm toastiness of nuts.

CALIFORNIAN WALNUT BANANA BREAD

Ingredients

1 cup refined flour (maida) + for dusting
1 cup whole wheat flour (atta)
¼ cup chopped California Walnuts
2 large bananas
½ cup butter + for greasing
1 cup condensed milk
1 tsp vanilla essence
1 teaspoon coffee powder
1 tsp baking soda
1 tsp baking powder
1 tbsp lemon juice
½ cup milk

Method

1. Preheat oven to 180° C. Grease an aluminium loaf tin with some butter and dust with some flour.
2. Cream together ½ cup butter and condensed milk in a bowl till light and fluffy.
3. Peel the bananas, slit and cut into small pieces. Add to the butter-condensed milk mixture and whisk till the bananas mash.
4. Add California Walnuts and mix. Add vanilla essence.
5. Sieve together refined flour, wheat flour, coffee powder, baking soda and baking powder into the bowl. Add lemon juice and fold well. Add milk and mix well.
6. Pour the batter into the greased tin filling ½ of it, level it out and tap.
7. Put the tin into the preheated oven and bake for 25-30 minutes. Remove from oven, cool and demould.
8. Slice and serve.
