A very different bhaji where whole capsicum is batter coated and deep fried. Stuffed with a mix of delicious vegetables and served like a chaat.

CAPSICUM BHAJI

Ingredients

4 medium capsicums, stems intact
1½ cups gram flour (besan)
A pinch of baking soda
¼ tsp carom seeds (ajwain)
Salt to taster
¼ tsp red chilli powder
¼ tsp turmeric powder
Toppings
Chopped onion as required
Chopped tomatoes as required
Chaat masala for sprinkling
Dry mango powder (amchur) for sprinkling
Chopped green chillies for sprinkling
Red chilli powder for sprinkling
Grated carrot as required
Sev for garnish
Chopped fresh coriander leaves for garnish

Method

1. Take gram flour in a large bowl, add baking soda, carom seeds, salt, red chilli powder, turmeric powder and ½ cup water and whisk to a smooth and thick batter.
2. Heat sufficient oil in a kadai, dip each capsicum in the batter and slide into the hot oil and deep fry till golden brown and crisp. Drain on absorbent paper.
3. To serve, cut the fried capsicum in to wedges and transfer on to a serving plate.
4. Sprinkle onion, tomato, chaat masala, amchur, green chillies, red chilli powder and carrot. Garnish with sev and coriander leaves. Serve immediately.
