Carrot and Coriander Soup

Carrots and coriander in this yummy soup fulfill up to half of your daily vitamin a requirement. While keeping the calorie count down to only 36 calories this soup wins the ultimate soup for weight watchers award!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes 2 servings

Ingredients
2 cups carrot cubes
2 tbsp finely chopped coriander (dhania)
salt and freshly ground black pepper (kalimirch) powder to taste

Method

1. Combine the carrots and 1½ cups of water in a pressure cooker and pressure cook for 2 whistles.
2. Allow the steam to escape before opening the lid.
3. Transfer to a deep bowl, add the coriander and blend using a hand blender to a coarse mixture.
4. Transfer the mixture to a deep pan, add ½ cup of water, salt and pepper, mix well and cook on a medium flame for 2 to 3 minutes.
Serve hot.
