CHAAT SANDWICH

Ingredients

¾ cup matra
8 slices of white bread
3 small potatoes, boiled and peeled
1 medium onion, chopped
1 small tomato, chopped
1½ tbsps freshly chopped coriander leaves + for garnish
2-3 green chillies, chopped
1½ tsps roasted cumin seeds
1 tsp chaat masala powder
Black salt to taste
Salt to taste
1 tbsp red chilli-garlic chutney
1 tbsp date and tamarind chutney
1½ tbsps green chutney
Butter as required
Masala boondi for garnish
Masala chana for garnish
Sev for garnish
Pomegranate pearls for garnish
Tomato ketchup to serve
Potato chips to serve

Method

1. In a large bowl, add matra, mash potatoes and add it to the bowl. Add onion, tomato, chopped coriander, green chillies, roasted cumin seeds, chaat masala powder, black salt, red chilli-garlic chutney, date-tamarind chutney, green chutney, and mix well.
2. Apply butter on the slices of bread and place a portion of the prepared mixture on 4 slices of bread and spread evenly. Top with the remaining slices.
3. Grease a grill toasted with butter and place the prepared sandwiches on it. Apply butter on the top of the sandwiches and grill till golden brown grill marks appear.
4. Cut the sandwiches in half diagonally, sprinkle crushed masala boondi, masala chana, sev, and pomogrante pearls.
5. Serve hot with green chutney, tomato ketchup and potato chips.

Masala Chana

Ingredients

1½ cups brown chick peas (kala chana), boiled
2 small potatoes, boiled and peeled
1 small onion, chopped
1 small tomato, chopped
1-2 green chillies, chopped
1 tsp roasted cumin powder
1½ tsps chaat masala powder
Salt to taste
1 tbsp freshly chopped coriander leaves + for garnish
2 tsps chopped raw mango
1½ tbsps green chutney
1½ tbsps date and tamarind chutney
1 tbsp red chilli-garlic chutney
Masala boondi for garnish
Masala chana dal for garnish
Sev for garnish
Pomegranate pearls for garnish

Method

1. In a bowl, add chana, mash the potatoes and add into the bowl. Add onion, tomato, green chillies, roasted cumin powder, chaat masala powder, salt, chopped coriander and chopped raw mango.
2. Add green chutney, date and tamarind chutney, red chilli-garlic chutney and mix well.
3. Transfer into individual serving bowls, garnish with masala boondi, masala chana dal, sev, chopped coriander, and pomegranate pearls.
4. Serve immediately.
