A soft and mouth-melting tikkis coated with chana jor and cooked to golden perfection! What a great starter!

CHANA JOR GARAM TIKKI

Ingredients

2 cups chana jor garam
4 medium potatoes, boiled and peeled
2 tsps coriander powder
½ tsp red chilli powder
¼ tsp turmeric powder
2 green chillies, chopped
2 tbsps chopped fresh coriander leaves
Salt to taste
1 cup fresh bread crumbs
Stuffing
½ cup grated cottage cheese (paneer)
2 tbsps grated processed cheese
A pinch of salt
1 green chilli, chopped
1 tbsp chopped fresh coriander leaves
Oil for greasing + for deep frying
Corn flour-refined flour slurry as required
Micro greens for garnish
Green chutney to serve

Method

1. Grate potatoes in a large bowl, add coriander powder, red chilli powder, turmeric powder, green chillies, chopped coriander and salt and bread crumbs and mix well.
2. For the stuffing, add cottage cheese and processed cheese in a small bowl. Add salt, green chilli and chopped coriander and mix well.
3. Take chana jor garam in a zip lock bag and coarsely crush using a rolling pin. Transfer on a plate and set aside.
4. Grease your palms with oil and take a portion of the potato mixture and make a cavity and stuff with a portion of the prepared stuffing. Shape into a tikki.
5. Dip each tikki in the prepared slurry and roll on crushed chana jor garam.
6. Heat sufficient oil in a kadai and deep fry the prepared tikkis till golden brown and crisp. Drain on an absorbent and transfer on to a serving plate.
7. Garnish with micro greens and serve hot with green chutney.
