What a great starter!CHANA JOR GARAM TIKKIIngredients2 cups chana jor garam 4 medium potatoes, boiled and peeled2 tsps coriander powder½ tsp red chilli powder¼ tsp turmeric powder2 green chillies, chopped2 tbsps chopped fresh coriander leavesSalt to taste1 cup fresh bread crumbsStuffing½ cup grated cottage cheese (paneer)2 tbsps grated processed cheeseA pinch of salt1 green chilli, chopped1 tbsp chopped fresh coriander leavesOil for greasing + for deep fryingCorn flour-refined flour slurry as requiredMicro greens for garnishGreen chutney to serveMethod1. Grate potatoes in a large bowl, add coriander powder, red chilli powder, turmeric powder, green chillies, chopped coriander and salt and bread crumbs and mix well. 2. For the stuffing, add cottage cheese and processed cheese in a small bowl. Add salt, green chilli and chopped coriander and mix well.3. Take chana jor garam in a zip lock bag and coarsely crush using a rolling pin. Transfer on a plate and set aside.4. Grease your palms with oil and take a portion of the potato mixture and make a cavity and stuff with a portion of the prepared stuffing. Shape into a tikki.5. Dip each tikki in the prepared slurry and roll on crushed chana jor garam.6. Heat sufficient oil in a kadai and deep fry the prepared tikkis till golden brown and crisp. Drain on an absorbent and transfer on to a serving plate.7.
