Chanar (Chenna) Devil Curry (Deep-fried Chenna balls with spicy dal stuffing in a thick curry)

This recipe Chanar Devil Curry is a lost recipe from the Thakurbari of Jorasakho.

***Ingredients for the Chenna balls :
Chenna - 200 gms
Green chili, chopped - 2 Pcs
Chopped cashew nuts
Grated ginger
Maida
Salt
- for the dal stuffing
Chana dal - 1 cup
Green chilly - 1 pc
Ghee - 2 tbsp
Kalo jeera (kalonji) - 1 tsp
Hing - 1 tsp
Turmeric powder
Salt as per taste

-for the curry
Ghee /oil - 2 tbsp
Cumin seed - 1/2 tbsp
Hing - 1tsp
Finely chopped ginger - 1 tbsp
Turmeric powder - 1/2 tbsp
Cumin powder - 1 tbsp
Coriander powder - 1/2 tbsp
Finely chopped green chilly - 2 Pcs
Tomatoes, chopped - 2 Pcs
Water - 2 cups
Sugar - 1 tbsp
Salt as per taste

+for garnishing
*Green chillies*
*Garam masala powder*
*Chopped coriander leaves*

*Method - How to cook.
Step1- Preparing the Chenna

Knead the chenna well adding chopped cashew nuts, grated ginger, chopped green chillies, maida and salt to taste.

Step 2 The stuffing

-Soak the dal overnight. Next morning transfer the dal in a mixer grinder and make a fine paste adding little mustard seeds.
-Heat a pan and add the dal mix and kalo jeera & add the hing, finely chopped ginger and green chillies.
-Stir for a few minutes. Add salt & turmeric powder and mix well.
-After a few minutes the dal paste (daler pur / stuffing) will be ready.
-Switch off the gas and allow it to cool

Step 3 - Prepare the Chenna balls
-Make balls with the kneaded chhana and put the dal stuffing inside.
-The inner stuffing will be of dal while the outer layer will be of chenna
-In a pan, heat oil and shallow fry the chenna balls till they are golden.
Curry.

Step 4 - The Gravy
-In a pan, heat oil and add cumin seeds followed by hing, tejpatta & chopped tomatoes.
-Add the finely chopped green chillies and grated ginger and mix well
-Add turmeric powder, cumin powder, coriander powder & red chilli powder and mix well.
-Add water, bring it to a boil
-Add the chhana balls and cook for 2 minutes without stirring. Ensure that the balls are well coated with the curry.
-Sprinkle little garam masala powder.
-Garnish with little more garam masala, chopped coriander leaves and whole green chillies and serve.
