The classic baida roti gets a lip-smacking twist in this recipe!
CHATPATI CHICKEN BAIDA ROTI

Ingredients

150 grams chicken mince
1 small onion, chopped
1 tsp ginger-garlic paste
2-3 green chillies, chopped
¾ tsp chaat masala
½ tsp dried raw mango powder (amchur)
1 tbsp freshly chopped coriander leaves
Salt to taste
1 tsp Tata Sampann Chicken Masala
Ready-made dough made using 1½ cups refined flour
Oil for greasing + for drizzling
4 eggs
Quartered onions to serve
Mint sprigs to serve
Green chutney to serve
Lemon wedges to serve

Method

1. In a bowl, add chicken mince, onion, ginger-garlic paste, green chillies, tomato, chaat masala, amchur, chopped coriander, salt, Tata Sampann Chicken Masala, and mix till well combined. Set aside.
2. Take a portion of the dough and shape it into ball and flatten it. Dip it in oil and place it on a worktop, and spread it into a thin disc using your fingers. Press the edges thin and the centre thick.
3. Place a portion of the chicken mixture in the centre and spread it slightly. Brush water on the edges. Break and egg and bring the edges to centre to seal the roti.
4. Heat a non-stick tawa, lightly lift the roti and place it on the hot tawa. Drizzle oil on the sides and cook on low heat till golden and crisp on all sides. Take it off the heat.
5. Cut the roti into 4 pieces and serve hot with quartered onions, mint sprigs, green chutney and lemon wedges.
