The classic baida roti gets a lip-smacking twist in this recipe!CHATPATI CHICKEN BAIDA ROTIIngredients150 grams chicken mince1 small onion, chopped1 tsp ginger-garlic paste2-3 green chillies, chopped¾ tsp chaat masala½ tsp dried raw mango powder (amchur)1 tbsp freshly chopped coriander leavesSalt to taste1 tsp Tata Sampann Chicken MasalaReady-made dough made using 1½ cups refined flourOil for greasing + for drizzling4 eggs Quartered onions to serveMint sprigs to serveGreen chutney to serveLemon wedges to serveMethod1. In a bowl, add chicken mince, onion, ginger-garlic paste, green chillies, tomato, chaat masala, amchur, chopped coriander, salt, Tata Sampann Chicken Masala, and mix till well combined. Set aside.2. Take a portion of the dough and shape it into ball and flatten it. Dip it in oil and place it on a worktop, and spread it into a thin disc using your fingers. Press the edges thin and the centre thick.3. Place a portion of the chicken mixture in the centre and spread it slightly. Brush water on the edges. Break and egg and bring the edges to centre to seal the roti.4. Heat a non-stick tawa, lightly lift the roti and place it on the hot tawa. Drizzle oil on the sides and cook on low heat till golden and crisp on all sides. Take it off the heat.5.
