Ingredients:-
Soaked basmati rice:- 1.5 cups

For the strawberry syrup
Strawberries:- 1 cup
Water:- 1 cup
Vanilla essence:- 1 teaspoon
Sugar:- 1/2 cup

For the Phirni
Milk:- 4 Cups/1 litre
Sugar:- 1 cup
Cardamom:- 1 teaspoon
Prepared Strawberry Syrup:- 1 teaspoon
Finely chopped pistachios or nuts
Rose Syrup (Optional)

Method of Preparation
- Firstly, soak 1.5 cups of basmati rice for 30 minutes
- Discard the water and blend rice to a coarse paste. keep it aside
- Heat a large saucepan and add in strawberries, water, sugar and vanilla essence. Mix everything well and cook it for 15 - 20 minutes to prepare the strawberry syrup.
- Now in a large Kadai boil 4 Cups/1-litre milk
- Stir occasionally, and simmer for 10 minutes or till the milk thickens
- Now add in prepared coarse rice paste.
- Stir continuously for 5 minutes or else, lumps might form.
- Boil the milk till the rice gets cooked completely
- Further, add 1 cup of sugar and prepared strawberry syrup
- Stir it and mix everything well. Add in cardamom powder and mix it as well
- Finally, serve chilled phirni garnished with few chopped nuts or pistachios and drizzled with rose syrup.
