Here’s an awesome egg preparation that is a popular breakfast item in Japan called Chawanmunshi. CHAWANMUNSHIIngredients 2 spring onions 2 eggs ½ cup chopped carrots 2 tablespoons chopped shredded chicken 2 tablespoons chopped prawns 2 tablespoons chopped shitake mushrooms 2 eggs ½ teaspoon sake ½ teaspoon Mirren sauce 1 teaspoon dark soy sauce Salt to taste 1 teaspoon crushed black peppercorns2 tablespoons dashi stock Method 1. Finley chop spring onion whites and greens. 2. Mix together chopped spring onions, carrots, chicken, prawns and mushrooms in a bowl. 3. Divide this mixture into 3 separate bowls. 4. Break eggs in a large bowl, add sake, Mirren sauce, soy sauce, salt, crushed peppercorns and stock and whisk well. 5. Pass the mixture through a sieve and pour the strained mixture into a bowl.6.
