Cheese and Egg Bread | Sanjeev Kapoor Khazana

If you like baking your own bread - you will definitely love this cheesy eggy loaf recipe.

CHEESE AND EGG BREAD - (Serves - 4)

Ingredients

½ cup feta cheese
¼ cup grated processed cheese
2 eggs
1¼ cups refined flour + for dusting
1 tablespoon fresh yeast
A pinch + 1 teaspoon castor sugar
1 teaspoon salt
1 tablespoon olive oil
1 egg yolk, beaten

Method

1. Take yeast in a bowl. Add a pinch castor sugar and 2 tablespoons warm water and mix well. Set aside to activate.
2. Combine flour, salt and 1 teaspoon castor sugar in another bowl and mix. Add activated yeast and mix well. Add sufficient water and mix well.
3. Transfer the mixture on the worktop and knead into a dough. Dust some flour on top and knead well. Put olive oil on top and knead into a soft dough.
4. Dust a bowl with some flour, transfer the dough, cover with damp muslin cloth and set aside to prove for 15-20 minutes.
5. Preheat oven to 180° C.
6. Dust the worktop with some flour, transfer the proven dough and knock back to release excess air.
7. Dust the worktop with some flour and roll out the dough to make a thick oval sheet. Roll the two opposite edges leaving 2-3 inch space in the center, twist the ends and discard excess to shape into a boat. Transfer the boat on a baking tray, cover with damp muslin cloth and prove for 10-15 minutes.
8. Lightly flatten the centre of the boat using the back of a spoon.
9. Fill a piping bag with feta cheese and pipe out in the boat. Spread processed cheese on top and brush with beaten egg yolk on the rolled edges.
10. Put the baking tray in preheated oven and bake for 18-20 minutes
11. Remove from oven, break eggs in the centre, put the tray back in the preheated oven and bake for 10 minutes.
12. Serve hot.
