Cheese Enchiladas- Mild, Medium and Hot version

These cheese enchiladas are very easy to make and is completely customizable with your favorite fillings including spicy version.
You can find 3 versions of making this delicious dish below.

This will be best with homemade enchilada sauce. It doesn’t take more than 20 minutes to make this sauce.


Ingredients:

Enchilada Sauce:
Olive oil-2 teaspoon
Garlic cloves- 3
Onion-1
Black pepper powder-1 teaspoon
Salt- 1 teaspoon
Coriander powder- 1 teaspoon
Jeera/Cumin powder-1 teaspoon
Red chilly powder- 1 teaspoon
All purpose flour- 1 teaspoon
Tomatoes-3 or canned dice tomatoes-1 can (15 oz)
Water/Veggie broth-2.5 cups

Fillings:
Jalapeno-2
Sour cream- 4 tablespoons
Cumin powder- 1 teaspoon
Black pepper powder- 1/4 teaspoon
Salt- 1/4 teaspoon
Sharp cheddar cheese-1.5 cups
Spring onions-2
Cheddar cheese- 5 cups
Corn tortilla-12

Directions:
1. Heat oil. Add garlic cloves and onion. Sauté until translucent.
2. Add black pepper powder, salt, coriander powder, cumin powder, red chilly powder and all purpose flour. Give it a stir.
3. Add tomatoes and water/veggie broth. Boil until gravy gets thick. Switch off the flame.
4. Grind into smooth paste. Enchilada sauce is ready!

5. Shallow fry 2 jalapeños and cut into small pieces. Set aside.
6. Take sour cream, black pepper powder, salt.cumin powder, cheddar cheese and spring onions in a bowl.. Mix it well.
7. Microwave/Heat corn tortilla for 1 minute. Then dunk it in enchilada sauce.
8. Place the fillings:

Mild version- Fill corn tortilla with cheddar cheese and roll it.

Medium version- Fill corn tortilla with sour cream cheese mixture and roll it.

Hot version- Fill corn tortilla with sour cream cheese mixture. Then top it with fried jalapeños and roll it.

9. Place the rolled tortillas in the baking pan. Cover it with enchilada sauce and sprinkle cheddar cheese on top.
10. Bake at 350 degrees Fahrenheit for 15-17 minutes.

Cheese Enchiladas are ready!!!
