A simple parantha with a great combination of potatoes and carrot that blend really well together with a delicious cheesy hint!CHEESY ALOO CARROT PARANTHAIngredients2 tbsps grated processed cheese1 small potato, boiled, peeled and mashed 1 small carrot, boiledReady-made dough made from 1 cup whole wheat flourA pinch of coriander powderA pinch of cumin powderA pinch of dry mango powder (amchur)Salt to taste Whole wheat flour for dusting4 tsps homemade white butter/ghee as requiredTomato ketchup to serve Method1. Take potato in a large bowl, grate carrot into it, add coriander powder, cumin powder, dry mango powder, salt and cheese and mix well. 2. Divide the dough into equal portions and shape each portion into a ball. Dust worktop with flour and roll out each ball into a thick disc. Stuff with a portion of potato-carrot mixture, seal the edges and roll into a small parantha. 3. Heat a non-stick tawa. Place the parantha on it, cook till the underside is almost cooked. Flip and cook till the other side is almost cooked.4. Apply 1 tsp white butter/ghee and cook, turning sides, till both the sides are completely cooked.5. Serve with tomato ketchup.
