Makes 10 tarts.Cheesy Corn Tarts with Caramelised OnionsIngredients10 tartsFor the cheesy corn filling4 cheese slices2 cups boiled sweet corn kernels (makai ke dane)1 tbsp cornflour2 tbsp milk2 tsp butter1 ½ cups milk4 tbsp chopped olives4 tbsp chopped jalapenos4 tbsp finely chopped basilSalt and freshly ground black pepper (kalimirch) to tasteFor The Caramelised Onions2 cups chopped onions2 tsp butter2 tbsp brown sugarFor The Garnish10 basil leavesMethod For the cheesy corn filling1. Combine the cornflour with 2 tbsp of milk in a small bowl, mix well and keep aside.2. Heat the butter in a broad non-stick pan, add the sweet corn kernels and sauté on a medium flame for 3 minutes.3. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally.4. Add the cheese slices, olives and jalapenos, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.5. Add the basil, salt and pepper, mix well and cook on a medium flame for 1 minute, while stirring occasionally.6. Add the cornflour-milk mixture, mix well and cook on a medium flame for 1-2 minutes, while stirring occasionally.7. Divide the mixture into 10 equal portions and keep aside.For the caramelised onions1. Heat the butter in a broad non-stick pan, add the onions and sauté on a slow flame for 5 minutes.2. Add the brown sugar, mix well and cook on a slow flame for 2 minutes, while stirring occasionally.3. Divide the mixture into 10 equal portions and keep aside.How to proceed1. Place a tart on a clean, dry surface, fill it with a portion of the cheesy corn filling and put a portion of the caramelized onions evenly over it.2. Repeat step 1 to make 9 more tarts.3. Serve immediately garnished with basil leaves.
