Scooped out boiled potato shells stuffed with creamy corn mixture and baked.CHEESY JACKET POTATOESIngredientsProcessed cheese as required4 medium potatoes, boiled3 tablespoons butter2-3 spring onion bulbs, chopped½ cup corn kernelsCrushed black peppercorns to tasteSalt to taste2 tablespoons refined flour1 cup milkChopped sprig onion greens for garnishingMethod1. Preheat oven at 180ºC.2. Halve the potatoes. Scoop out the flesh and reserve alongwith the shells. 3. Heat 1 tablespoon butter in a non-stick pan. Add spring onion bulbs and corn kernels and mix well. Add crushed peppercorns and salt, mix and cook for a minute.4. Add the reserved potato flesh and crushed peppercorns and mix well. Remove from heat.5. To prepare white sauce, heat remaining butter in a non-stick pan. Add flour, mix and cook for a minute. Switch off the heat, add milk and mix well. Turn on the heat and sauté for 5-7 minutes. Add crushed peppercorns and salt, mix and cook for a minute. Switch off heat and set aside.6. Add the prepared white sauce to the prepared potato mixture and mix well. 7. Place the potato shells on a baking tray.Fill each with the prepared potato-white sauce mixture. Grate some cheese over each potato jacket.8. Put the baking tray in preheated oven and bake for 10-14 minutes.9.
