CHERRY PULAOIngredients200 grams fresh cherries, halved and deseeded + whole for garnish 1½ cups basmati rice, soaked2 tbsps ghee4-5 cloves6-8 black peppercorns4-5 green cardamom2 tbsps raisins Salt to tasteA few saffron strandsCandied cherries, cut into slivers for garnishMethod1. Heat ghee in nonstick deep pan, add cloves, black peppercorns and green cardamom and sauté for minute.2. Add the ¾ cup cherry and sauté for 1-2 minutes; add in the raisins continue to cook for 1-2 minutes. 3. Add the soaked rice and sauté for minute stir in the 3 cups water, salt and saffron strands and mix well.4. Cover and cook on medium heat for 8-10 minutes. 5. Transfer the rice on a serving plate and serve hot.
