CHEWY RICE CAKE RECIPE (Kalamay)

Who doesnt love kakanin? Kalamay sa latik is so easy to cook, you can make a whole tray of it at home today! Chef Martin is spoiling us with all these recipes from our trip to Cavite, we dont know how to recover from this! Where should we go next?

KALAMAY SA LATIK
Ingredients:
Latik:
2-1/2 cups coconut cream

Kakanin:
3 cups glutinous rice flour
1 cup coconut milk
cup sugar

Syrup:
1 cup water
1 cup dark brown sugar

Procedure:
1. Make the latik by simmering coconut cream over low heat until greatly reduced and browned. Set aside.
2. In a bowl, combine glutinous rice flour, coconut milk, and sugar. Place in an oiled container and steam for 10-12 minutes over medium heat. Cool down and cut into cubes.
3. Make the syrup by bringing water and sugar to a simmer for 2-3 minutes until thick. Serve combined with kakanin and topped with latik.
