KALAMAY SA LATIKIngredients:Latik:2-1/2 cups coconut creamKakanin:3 cups glutinous rice flour1 cup coconut milk cup sugarSyrup:1 cup water1 cup dark brown sugarProcedure:1. Make the latik by simmering coconut cream over low heat until greatly reduced and browned. Set aside.2. In a bowl, combine glutinous rice flour, coconut milk, and sugar. Place in an oiled container and steam for 10-12 minutes over medium heat. Cool down and cut into cubes.3. Make the syrup by bringing water and sugar to a simmer for 2-3 minutes until thick.
