CHICKEN AND PRAWN RICE WITH PEPPERSIngredients250 grams boneless chicken, cut into 1 inch pieces8-10 medium prawns, shelled and deveined 1½ cups rice, soaked for 30 minutes and drained1 medium yellow bell pepper, cut into cubes1 medium green capsicum, cut into cubes1 medium red bell pepper, cut into cubes1 tablespoon butter½ tablespoon oil1 tablespoon chopped garlic1 medium onion, finely chopped1 medium tomato, blanched, peeled and finely choppedSalt to taste1 teaspoon paprika6-8 broccoli florets 3 cups chicken stockMethod1. Heat butter and oil in a deep non-stick pan. Add garlic and sauté for 30 seconds.2. Add onion and sauté till translucent. Add tomato and sauté for 1 minute. Add salt and paprika and mix well.3. Add chicken, mix and cook for 1 minute. Add rice and mix well. Add yellow bell pepper, green capsicum, red bell pepper, broccoli and chicken stock, mix and bring to a boil.4.
